Paella is a classic Spanish dish made from rice with saffron and added to a wonderful mix of delicacies, which vary greatly depending on where the paella is located!

Of the many varieties, for example, Paella de marisco can be mentioned, which is made with seafood, most often you can find such on the coasts. Here there is typically squid, mussels and prawns. Then there is also paella mixta which is a mix of meat and seafood, most often the meat consists of some rabbit, chicken or pork.

The paella originally comes from Valencia in Spain, and here you will find a paella with only meat and vegetables in it. There is a lot of discussion about what is allowed to be put in a paella, for example some people enjoy adding chorizo ​​sausage, but for others this is extremely phy-phy!

How do you make paella?

Common to all Spanish paellas is that they are made in a special paella pan and preferably on bomba rice, which is short in the grain and more round than, for example, jasmine rice. Paella rice is most reminiscent of risotto rice, as the short grains make them stickier and absorb more flavor. If you don't have paella rice, risotto rice can also be used, but best of all is the real Spanish paella rice!

The paella pan is important as it makes the preparation of the rice significantly faster, at the same time as it gives just the right look and makes it possible to make the much-loved socarrat, which is the slightly burnt, crispy base that most people fall over! All the flavor concentrates here and gives a slightly different texture to the dish. It can be difficult to achieve just the right socarrat, but with a little practice you will definitely find the best method for you!

Unlike risotto, it is important NOT to stir your paella after the rice has been added! But otherwise, the preparation of paella is very similar to the preparation of risotto. First you fry the side dishes and make a sofrito (which is a form of fried tomato sauce), then the rice is briefly sautéed and a generous amount of stock is poured over it, to which saffron has been added. Depending on whether it is paella mixta, paella valenciana or paella de marisco, for example vegetable stock, chicken stock or shrimp stock is used.

After the stock has been added, the paella is left to simmer just as quietly. If you want shellfish such as mussels in your paella, place the raw mussels decoratively on top of the rice a little before the paella has finished simmering. Once opened, they are ready!

Prawns and squid are also very traditional, although they are cooked a bit earlier, just like the meat. All accessories, i.e. fish, meat and vegetables, are then mixed into the paella. Things like prawns or lobsters are also placed decoratively and preferably whole on top of the rice. Finally, the flame is turned off and the paella is covered with a piece of cloth or tea towel so that it can absorb the last flavor under the cloth. After that, it's finished, and the most wonderful scent will spread as soon as you take the cloth off!

Paella is traditionally made over a fire, but nowadays there are paella pans for ceramic stoves and induction (for example in our paella kit). And feel free to make plenty of it so that the whole family can eat together, just like for the traditional Spanish Sunday family lunches. A must is always plenty of lemon boats and good with cold drinks! Buen provecho!
