Guanciale is a fantastic cut of dry salted Italian pork jowl that is perfect for your Carbonara!
Guanciale is similar to bacon but, as I said, is made from pork jowls, unlike Pancetta and regular bacon, which comes from the breast or the piece under the belly of the pig. This difference makes Guanciale taste even more powerful! Therefore, you also need a smaller amount of Guanciale in the food than classic bacon.
In addition to a delicious pasta Carbonara, you can also use your Guanciale in stews as a flavoring agent, or in other pasta dishes such as Pasta all'Amatriciana with a wonderful tomato sauce or Pasta alla Gricia, which is a wonderful, simple pasta dish with Guanciale and plenty of Pecorino Romano!
You can actually use your Guanciale anywhere you would use regular bacon, to give the dish a boost of flavor. For example, try Guanciale on burning love, or thinly sliced on top of pizza!
