Finocchio is a wonderful Italian salami with fennel seeds that tastes heavenly and goes perfectly with your Italian antipasti side dish, with a glass of wine or in a delicious Italian sandwich!
The name Finocchio comes from the content of fennel seeds, as Finocchio means fennel in Italian!
In addition to fennel, Finocchio also contains garlic and is made from pork.
The recipe for Finocchio dates back to the Renaissance (or maybe further back), and arose because the price of pepper to make classic salami was quite spicy, but fennel grew wild and violent in Tuscany, where this wonderful salami comes from!
Finocchio salami was cunningly also used by the town of Chianti's winemakers if they had to serve lower quality wine. Fennel has the property of "sedating" the taste buds a little, so that the wine's less good qualities could go undetected past the discerning wine buyers' noses.
